Poultry Menu


1. The Superb Roasted Chicken
Whole roasted organic chicken, basted with a truffle mushroom butter and served with natural rosemary jus

2. Chicken Breast Stuffed with Crab
Organic roasted chicken breast stuffed with lump crabmeat, garlic, and boursin cheese. With a citrus cream sauce.

3. Balsamic Glazed Chicken Breast
Marinated chicken roasted and glazed with balsamic syrup, served with a blueberry vinaigrette.  

4. Chicken Chimichurri
Chicken marinated in chimicurri sauce, grilled, and topped with a watermelon relish.

5. Grilled Poussine
Poussine or a tiny young chicken marinated and grilled and served a tomatillo peach sauce.

6. Coq Au Vin
Classic French fricassee of chicken, mushrooms, and cippolini onions, served in a cream sauce.

7. Chicken Marsala
Chicken cutlets braised in aged marsala wine.

8. The Superb Roasted Turkey
Organic whole roasted turkey with all the trimmings served with a natural rosemary jus and a light turkey gravy.

9. Hoisin Glazed Duck
Whole roasted duck glazed in hoisin, scallions, garlic, and ginger. Served with traditional green onion pancakes, sprouts, and a spicy soy essence.

10. Pan-Roasted Duck Breast
Simply prepared and served with it’s natural jus

11. Duck Confit Salad
Slow poached duck confit, over wilted spinach and radicchio, crisp bacon, caramelized onions and a blood orange vinaigrette.
12. “Turducken” Lasagna
Creamy layers of noodles, chicken, duck confit, and turkey ragout, with a blend of artisan cheeses.
